Here's a recipe from Epicurious, just modify it for your Dutch oven, Kyle. 1 cup whole milk 4 large eggs 3 tablesthingys sugar 1 teasthingy vanilla extract 1/2 teasthingy salt 1/4 teasthingy ground cinnamon 2/3 cup all purpose flour 4 tablesthingys (1/2 stick) unsalted butter 12 ounces Golden Delicious apples (about 2), peeled, cored, thinly sliced 3 tablesthingys (packed) golden brown sugar Powdered sugar (optional) print a shopping list for this recipe preparation Preheat oven to 425°F. Whisk milk, eggs, sugar, vanilla, salt, and cinnamon in large bowl until well blended. Add flour and whisk until batter is smooth. Place butter in 13x9-inch glass baking dish. Place dish in oven until butter melts, about 5 minutes. Remove dish from oven. Place apple slices in overlapping rows atop melted butter in baking dish. Return to oven and bake until apples begin to soften slightly and butter is bubbling and beginning to brown around edges of dish, about 10 minutes. Pour batter over apples in dish and sprinkle with brown sugar. Bake pancake until puffed and brown, about 20 minutes. Sprinkle with powdered sugar, if desired. Serve warm. Better make a big stack, Kyle, I get pretty hungry after a day on the water.

thanks ken. i took parts of your recipe(the batter) and combined them with what i rememberd and made it today to try it out. worked good. when i do it i fry the sliced apples in butter and cinnamon and lots of brown sugar for about 4 or 5 min. sprinkle in a handfull of homemade bacon bits or some of the store bought real bacon bits then pour the batter over this and stick in a reflector oven for about 20 to 30 min on high. and i promise i will try to remember to make this next time we meet up on the river.

I think I may have that issue...somewhere... I'll so some digging.
Couldn't find that particular one, but I did find recipes for Campfire Scones, Campfire Cinnamon Buns and Breakfast Cinnamon Buns.
I bet the Scones would be mighty tasty with some apples in them!
